Quick Tip: Salad at the Ready

Earlier this week I said that I would have a few kitchen posts this week. Partly, because this weekend, I spent an unusually amount of time in the kitchen while we were deep cleaning the house and Prince Charming is using the office/craft room this week as he is studying for the Bar Exam next week. Since he is studying with rarely an hour break at a time, I really can't get there in for much sewing this week.

One of the things I did this weekend was prep for salads this week. I love salads, but sometimes it can be time consuming, and since I have Lil Monkey at home with me, I usually opt for something quick. At the start of the summer, I decided that we would limit going out to eat for lunch while we were doing our summer activities. 




Since I've been on blue cheese kick lately, so on grocery day, I chopped all the salad elements and put them in a containers. For blue cheese salads I chop tomatoes, purple onions, and cucumbers and mix in a bowl. If I decide to switch it up, I also boil 2 or 3 eggs and then cut them up before I put on a salad. If I don't use then within a few days, they are a great quick and healthy snack.  


When it comes time for lunch, I just grab a handful of baby spinach (so I don't have to cut lettuce) and pour a handful of the veggie mixture on it as well as adding some shredded cheese. Through the week, I also chop up some chicken or other protein to add to salads later in the week. I've had a better time of eating healthy by doing this short prep work on grocery day.

I can also throw together quick side salads at dinner and its budget-friendly. Do you have any "quick tips" for healthy eating or juggling life with kids?
