Finding Fun Fall Foods!!

Today is the first day of Fall, which means I will am getting back in the kitchen a trying some new recipes. Despite the fact that the temperatures are still in the 90s here in the Deep South, I thought I'd embrace the fast approaching Holiday Season with some Fall themed kitchen creations.

Recently, I saw this recipe for Pumpkin Cream Cheese Cake on Facebook and of course, I had to try it! I also found a spinach lasagna recipe that I altered, so to kick off the first day of Fall with a few hours experimenting in the kitchen!

First, I made the Pumpkin Cream Cheese Cake. True to the reviews, it was amazing. It was easy to make, and most of the ingredients I already had in the pantry. I made this 8-inch square pan and two small loaf pans and they both required the same amount of time to cook, 50-minutes. It was odd that the times didn't alter, but regardless, it tasted amazing! Even Lil Monkey liked it, though he preferred the parts without the cream cheese on it. We definitely put a dent in this before we put it away for the night!

While that baked, I got started on stuffed shells for dinner. I had a recipe for spinach lasagna and decided to alter it a little make stuffed shells.

First I cooked the large pasta shells to cook according to the directions.

Second, I cooked and drained a steamer bag of spinach. Then let it cool. After it cooled, I mixed it together with one egg, 15 oz. ricotta cheese and 1/2 c. of grated Parmesan.

After the shells finished cooking, I drained them and spread them out in a large bowl to cool a little bit before I handled them.

Once everything was ready, I started to stuff the pasta shells and lay them seam side down in the baking dish.

I had enough to make two layers, so I poured half a jar of spaghetti sauce over this layer before finishing with another layer. Once all the shells were stuffed, I poured the remaining sauce over them and sprinkled a handful (1/2 c. or so) of shredded Mozzarella cheese over it.

I then baked it in a 350 degree oven for 30 minutes.

I can honestly say that even now, an hour after eating and cleaning the kitchen, I am happily stuffed! Well, I'm off to have a cup of tea before bed.
